Good morning! I hope you had a lovely weekend. Isaac was busy working a beer event on Saturday so I tried out a new-to-me workout class and spent the rest of the day catching up on work stuff. Sunday we visited my mom earlier in the day and then had dinner with Isaac’s mom and dad in the evening. It was nice celebrating Mother’s Day with both of our mamas.
I’m traveling this week so I’m actually at the airport waiting to leave for Minneapolis as I type this! I’m a little sad to be leaving 80° weather here in Richmond for colder temps, but I’ve never been to Minnesota before so I’m really excited to visit and explore. I’m currently debating whether or not I should hit up Mall of America while I’m there. Is it as epic as it’s seems?

I hope you like Mexican food because for whatever reason I’ve been on quite a Mexican kick. I blame Cinco de Mayo. And the fact that tacos (and taco salads) are so easy to make. I think Taco Tuesday might become a regular thing around here.
Isaac has been making tacos with tortillas, but I’ve been hooked on taco salads. No surprise there — me and my salads. 😉
