Trail mix is one of my favorite foods to snack on, but for some reason I don’t have many recipes posted here on EBF. This is about to change as I’ll be sharing a new mix recipe every day this week. Get excited!
This first one is dedicated to Isaac because today is actually HIS birthday.
Given his love for peanut and butter jelly sandwiches I knew I needed to make a pb&j trail mix for him.
The mix has salted Virginia peanuts (they’re the best!), sweet dried blueberries and peanut butter chips. I also added some dried bananas to the mix. I know some pb&j purist might not like the addition, but banana slices are a mainstay when I make peanut butter and jelly sandwiches, plus they had another crunchy element to this mix. I’m all about that crunch so any extra crunchiness is good by me.
If you’re a peanut butter lover, you will adore this sweet and savory combo — especially the bites with peanut butter chips. They’re the best part.
I should mention that I had a really tough time finding peanut butter chips with an ingredient list that I approved of. They all had hydrogenated oils. Ugh! I finally found the Sunspire peanut butter chips online and ended up buying and using those. The…
