My love for overnight oats is still going strong and I’m figuring most of you are right there with me! I shared my Strawberry Shortcake Overnight Oats earlier this month and today I have a version that combines all your favorite tropical flavors in one bowl. Think banana, pineapple, mango and coconut — oh yeah!
And then start day dreaming about sunshine, your toes in the sand and waves rolling in… double oh yeah!
I don’t know about you, but I could totally see myself living on a tropical island. Seriously! I’ve always wanted to be a surfer girl. I crave warm weather. I adore tropical foods… and tropical cocktails. Omg, have you ever had a Painkiller or a Bushwhacker?!? Way too sugary for more than one, but they’re so good!
When we were on our honeymoon in St. Croix I almost convinced Isaac that we needed to move there. I was like, “You could totally get a job at the local Montessori school, I could open a salad shop on the beach. It will be awesome.” Alas, we came back to Richmond and life went on.
Maybe we’ll retire there.
In the meantime, we can still visit tropical places (as research for our retirement spot) and enjoy a taste of tropical flavor at home. It’s not exactly the same, but it will do for now.
